Good morning y’all & happy Monday. I woke up on the right side of the bed this morning for sure and I’m in a great mood, which is pretty rare for a Monday. I hope that each of you had a great weekend and woke up this morning feeling pretty good yourselves.
It feels good to be caught up on blogging & be able to give you an actual week long recap today.
Now grab your coffee, tea, or wine (😉) and get to reading:

After wrapping up work last Monday evening, I swung by a nearby H-E-B to pick up a montage of things for dinner. I was looking for something quick & delicious and was able to find exactly what I was looking for in their oven-ready section.
Jordan and I enjoyed some Southwest Seasoned chicken breasts, jalapeño poppers, and mashed potatoes while we watched another great episode of Westworld.
Tuesday was a pretty great day! I woke up early to coach a few morning lessons, made some PB & Nutella toast for breakfast, and then spent the afternoon soaking up some sunshine before I had to be back at work again.

Tuesday night was another quick & delicious dinner. I made some scrambled egg sandwiches on whole wheat bread. I absolutely love my scrambled eggs with ketchup!

Started my Wednesday morning off right with some PB & Nutella toast + a cup of coffee.

Jordan and I had a little lunch date at Olive Garden on Wednesday afternoon and the food was sooo good! I was craving a good pasta and Olive Garden certainly did not disappoint!
We shared their salad & breadsticks to start off and then devoured the Chicken & Shrimp Carbonara.
Since I was slightly dressed up with some make-up on, I figured why not take a bumpdate. I recently purchased this super comfortable Isabel Maternity Dress at a nearby Target and had fun pairing it with a cute retro t-shirt & some delicate jewelry.
I was 24 weeks & 4 days when my sweet hubby snapped these photos. At this point in my pregnancy I have still been feeling pretty darn good. The hardest symptoms I’ve had to endure lately is some round ligament pain, lower back pain, and a lot of discomfort in my right rib region. All of these symptoms are due to my boy growing bigger & stronger each day, so I can’t complain much. I’ve been trying my best to relax when I can, find comfortable positions to sit/lay in, and taking Tylenol as needed.
Thursday’s are my craziest work days with multiple breaks between coaching lessons & classes, so I try to make the most of each break. During my 1 1/2 hour break, I made my way to the park for the first time in forever.
It has been so hard to make time to go for my outdoor walks lately and when I do have time the weather hasn’t cooperated with me, so I was beyond excited to have a moment to get in a wonderful 2 miles before the rain began.

Once I finally wrapped up coaching for the morning, I grabbed some lunch at Chipotle & got cleaned up before my OB appointment.
I ordered a bowl with brown rice, black beans, steak, guacamole, sour cream, and shredded cheese + a side of chips. It hit the spot for this hungry Mama!
I had my 24 week check-up with my OB a little later that afternoon and it went very well. Doc says that the baby is measuring just right and that I’m looking very healthy, so that was great news. My next big step is to take the oh so exciting gestational diabetes test, which I will do at 27 weeks, just before my next appointment. Wish me luck!
Jordan and I look forward to every Thursday afternoon because it means we get to see our girl!
Mila and I enjoyed an ice skating lesson together right after school and then met Jordan at the house to create some special memories together.
The 3 of us went around the house writing bible verses & quotes that are special to us and Mila had fun writing her name and some art in her bedroom.
Also, as you can kind of see, the builders have installed the insulation in our home.

Spaghetti for dinner! This is always one of my go-to’s for an easy meal that the whole family loves. I honestly think Mila could eat spaghetti every single day if we let her.
I typically make our spaghetti with Barilla spaghetti noodles & Emeril’s Homestyle Marinara Sauce. We also love to pair our pasta with whole wheat garlic toast.
Friday was a blur, so let’s skip straight to Saturday… After a long morning of coaching, I came home & relaxed with a nice afternoon nap (hello 25 weeks of pregnancy!). Jordan and I spent the rest of the afternoon/evening grocery shopping, spending time at the pool, and cooking a random dinner.
We enjoyed some Caesar salad, jalapeño poppers, Mac n’ cheese, and baked beans while wrapping up season 2 of Westworld.
It felt amazing to not have to wake up to an alarm clock for the first time all week. I was able to sleep as long as I wanted and enjoy a nice walk with coffee & my boys until it began to rain.
Jordan and I also went back to the house to write a few more bible verses, quotes, and part of our vows in our bedroom. I loved being able to enjoy that special moment with him and it makes me so happy knowing that these words will be in our home forever.
We had our friends Taylor, Wesley, and their little one over for dinner & games! We all hung out & snacked on some garlic & herb bagel chips with H-E-B’s Spinach Dip while Jordan made some incredible food on the Traeger.
Jordan grilled sausage, crawfish stuffed jalapeño poppers, Touch of Heat flavored pork, and some deliciously sweet pork belly. I also paired the meat with sides of potato salad, Mac n’ cheese, and corn.
The Pork Belly Recipe that Jordan created was amazing. If you click the link, it will take you straight to Jordan’s step-by-step video on how to make this pure deliciousness yourself.
Once we finished filling our bellies with incredible food, we played a game of Phase 10 before calling it a night. It was so much fun being able to host our friends. I seriously can’t wait until we have our house finished and can have as many people over as we’d like.

I’ve had a very nice Monday morning so far relaxing, getting some chores done, and enjoying some breakfast before I have to coach this afternoon. It’s a dreary day, so naturally I have a Harry Potter film on to embrace the coziness, which makes me oh so happy.
I hope that each of you had a wonderful weekend and have a great rest of your week. I’ll be back to write again very soon!
XOXO, Paige.
