Good morning y’all & happy Monday! I am most certainly feeling the Monday blues this morning and hoping I can cross off everything on my to-do list before work this afternoon. I hope each of you have been doing well and enjoyed an amazing weekend.

The last 2 weeks have been insane & most of the week following Easter was a total blur because we had so much going on + I got zero pictures. We are going to pick this recap up from weekend after Easter.
Saturday, April 10th, was a big coaching morning at the rink and the start to rehearsals for our upcoming Spring Show. This show will be extra special because it is Mila’s first skating event that she has ever participated in. Mila and I both had an absolute blast at her first rehearsal!
Immediately after coaching was done, Jordan and I were starving so we grabbed some plant-based burgers at Hopdoddy.
We had a very relaxing rest of our day and wrapped it up with some delicious jambalaya & cornbread for dinner. Saturday also marked week 20 of pregnancy (halfway through) which I thought was crazy!! I can’t believe how quickly this pregnancy is flying by and how quickly I’m running out of room in my belly lol.

We started off our Sunday slow & relaxed with some pancakes and coffee. It was just what I needed after a crazy week!
Later that afternoon, we toured our home-build with Jordan’s parents because they hadn’t seen it in a while. The home-build has been moving rather slowly lately so that’s why you guys haven’t seen an update in a little while. We are hoping and praying the builders will start moving a little bit faster soon. We cannot wait to move in!
Jordan and I grabbed some very late lunch/early dinner at Buffalo Wild Wings. I enjoyed some boneless spicy garlic wings with a couple of non-alcoholic Heineken’s. It was great!
We also stopped in at a nearby Target to try and look for this Mama some new clothes afterwards. Sadly the fitting rooms were still closed, so I only ended up walking away with 1 dress that will fit this baby bump so far, but it’s cute and I really appreciated Jordan’s help!
I got up bright and early last Monday morning to put together Jordan’s breakfast & lunch for the day. He loves to eat a variety of sliced fruits with coffee for breakfast and lunch is always changing. This time he tried out a seafood salad that we found at H-E-B with some chipotle Mayo on whole wheat bread. He said it was pretty good, but you can’t beat H-E-B’s cranberry & Turkey salad!
Once I got that all wrapped up I enjoyed some pancakes, berries, and coffee before conquering as much on my to-do list as possible before work that afternoon.

Monday felt very long…. after we both wrapped work, Jordan and I enjoyed a yummy home-cooked meal together + a new TV series. We ate some beef wagyu burgers on Hawaiian buns with a side of panko crusted onion rings. They were delicious! We also decided to try out the first episode of Westworld on HBO Max before calling it a night.
After an early morning of coaching on Tuesday, I came home to get in a quick outdoor walk, get some chores done, and study before heading back to work that afternoon.
I have been so crazy busy lately that I haven’t had time to get in as much movement as I would like, so it felt really good to get out and move again even if it was just for a little bit. I’m hoping life will start to slow down a bit so I can put some more focus on exercise for the baby and myself. I truly feel so much better mentally and physically when I can at least get my outdoor walks in.
Lunch at home was so good on Tuesday! I have always loved a good tuna fish sandwich, but I swear they taste even better these days! I mixed up some light tuna with mustard & vegan Mayo before putting it onto some whole wheat bread topped with Fritos & had a side of strawberries, pineapple, and blackberries. Yum!

Jordan and I had a long day full of meetings in Downtown Houston on Wednesday. We tried Uberrito’s for the first time, which is super similar to Chipotle or Freebird’s. I ordered a burrito bowl with cilantro lime rice, black beans, guacamole, sour cream, shredded cheese, and Serrano ranch. Chipotle is still my all-time favorite, but this place was also pretty good!
It was finally Thursday which meant we got to see our girl Mila!! It felt like it had been forever since we had seen her last. She was so excited to have her skating lesson right after school & did a really great job.

After we wrapped up skating, we made our way home to have dinner & get ourselves ready for bed. I made some sautéed potatoes, baked some seasoned zucchini & squash, and warmed up some ranch style beans for dinner. I love to add a tiny bit of A1 sauce to the potatoes & beans and mix them all together!
Mila tried a little bit of everything + I made her some rice to have as well. She is a big ranch style bean lover so this meal is always a hit!
Mila had a remote learning day on Friday, so we got to sleep in a bit and then start our morning off with some fruit smoothies. Mila absolutely loved getting to help me make her smoothie and drank every last bit of it.
Mila’s Strawberry Banana Smoothie:
•1/4 cup of Simply’s unsweetened almond milk
•10 small fresh strawberries
•1 whole banana
•1 handful of ice
Bonus Mama’s Green Smoothie:
•1/4-1/2 cup of unflavored coconut water
•5 large fresh strawberries
•1 whole banana
•1 handful of baby spinach/kale mix
•2 tablespoons of all-natural peanut butter
•1 handful of ice
Mila and I had a very fun girl’s day getting her school work done, going for a bike ride/walk, and going shopping together!
I whipped up one of my favorite plant-based recipes for dinner Friday evening! The Balsamic Vegetable Medley with a side of roasted garlic couscous is such a filling and flavorful dish. To my surprise, Mila ended up liking the Brussel sprouts & baby spinach/kale mix in the medley. I think it’s going to take some time for her to become a bell pepper fan, but I was so excited that she loved the greens!
I started Saturday morning off with coaching private lessons/group class & did some costume measuring for the show until Jordan and Mila joined me for Mila’s show rehearsal. I was beyond exhausted after coaching that morning and took a much needed nap while Jordan & Mila had fun spending time together & playing Fortnite!
We had a fun-filled evening together enjoying Natalita’s #3 to-go & teaching Mila how to play Clue for the first time.
Saturday also marked 21 weeks of pregnancy. How am I already over halfway through?! As you can see my belly is getting bigger and bigger. It’s getting a little more difficult to move around & get a good night of sleep, but I’m loving getting to feel him move around more and honestly hardly have any complaints of pregnancy symptoms at the moment. Just less than 19 weeks until Kannon’s due date. It’s going to be here before we know it!
I whipped up a spicy potato & egg scramble for breakfast on Sunday morning. It included Yukon gold potatoes, jalapeños, scrambled eggs, paprika, pink Himalayan salt, ground pepper, a tiny bit of cumin, a sprinkle of cayenne pepper, and a Mexican blend of shredded cheeses. I paired the scramble with some peach salsa & a slice of whole wheat toast. It was great!
The 3 of us spent Sunday afternoon at Jordan’s parents house enjoying lots of fun outdoor activities. Mila rode her bicycle around the cul-de-sac, played frisbee, & we all drew things with chalk on the concrete. We ended the evening with a home-cooked dinner and a big game of Clue with Jordan’s brother, Luke, and Luke’s girlfriend, Allie. It was a very fun way to end the weekend.
This Monday morning was a tad bit rough. I was feeling pretty exhausted while helping getting Mila ready for school, whipping up a fruit smoothie for her to have for breakfast/filling up her lunch box, and putting together Jordan’s breakfast.
I made myself some coffee to enjoy while I wrote today’s recap for you all. As I sit here reflecting on the past 2 weeks, I feel relieved we made it through it all and thankful looking back at the time I was able to spend with Jordan & Mila. This upcoming week is going to be an exciting & eventful one that I cannot wait to share with you next recap!
