Hello and happy Friday everyone! I can’t believe it’s almost been 3 weeks since my last recap. Life has been amazing, yet crazy to say the least. I can’t wait to fill you in on everything my little fam and I have been up to lately.

Starting off the day I left you guys last….
I decided to try out Hello Fresh after hitting what felt like a writer’s block when it came to coming up with new recipes/not having the additional energy needed to go to the store and pick out dinner options. Our first meal was their Pasta Primavera with a Lemon Parmesan Sauce and it was absolutely delicious. It was a great vegetarian dish filled with tons of color and flavor.

I made my way to the park on Tuesday morning in between coaching for a gorgeous outdoor walk. I have been enjoying my time outdoors (when we have nice weather) tremendously lately.

For Tuesday night’s dinner, we enjoyed a delectable Salmon dish with a Creamy Dijon Chive Sauce + a side of roasted zucchini and potatoes. This was one of my favorites. We ended the night watching “Coming to America” for the first time, which we both found hilarious. I’m honestly surprised neither of us had ever seen it until now.
I had a ton of work to get done on Wednesday, so I made some quick meals at home for breakfast & lunch while I set up camp in the living room. I’ve been working hard on studying for my AFPA Health & Wellness Coaching certification. Getting the study time in while coaching skating, being a wife, a bonus mama, and pregnant has been a lot to take on, but I’m proud to say that I’m making it happen and will be so excited to wrap up this certification very soon.

I’m not lying when I say that Wednesday was a crazy busy day. I literally stayed up working until 11pm. My sweet husband took on the task of making dinner by putting together Eggplant Parmesan for his very first time. It turned out great and I truly couldn’t have been more thankful for him taking on the duty of cooking for the night.
We had our girl with us for the night on Thursday, so we all made our way to the house to check and see if there were any new updates. We were all thrilled to see that they had started framing our home.
I enjoyed a nice & relaxing day on Friday getting in some extra study time and not worrying about having to go back in to work that afternoon. Jordan surprised me that evening with a (much needed) nail salon date. He took me to one of my favorite salons, Palace Nails & Spa. They did such a great job and keeping us feeling safe by continuing to implement face masks and social distancing. We were able to just sit back and relax. Plus I got some super cute nails out of it!
For Friday night’s dinner, I made the Hello Fresh Panko-Parmesan Crusted Chicken with a Creamy Lemon Sauce Pasta, which was also delicious!
After teaching a couple of lessons early Saturday morning, I got in a nice 2 mile walk before heading home to rest for a big work day ahead.
Saturday also marked the start to week 16 of my pregnancy. Our baby boy was now the size of an avocado and I was feeling pretty great.
I coached my first skating competition in over a year. Due to the pandemic so many events over the past year had been cancelled and my students were unable to compete. We were all so excited that our home rink was hosting a skating competition.
I had 3 skaters compete and they all did a terrific job. They each took the ice with joy, confidence, and grace + a little bit of nerves after not competing for a while. I was so proud of each of them for holding their heads up high after having to face so many obstacles in their training throughout this last year.

I decided to make Sunday a day for complete relaxation. I slept in until about 8:30/9am, made some cinnamon rolls, and just chilled out most of the day.
Jordan and I did stop by the home build later than afternoon to show my grandparents the progress. We were also pleased to see that they had completed most of the framing on the first floor.
The next Hello Fresh box arrived last Monday. I decided to do one more week of dinners for now. I definitely highly recommend Hello Fresh. Some meals were very time consuming for me as I learned different cooking techniques & tried cooking with new ingredients, but I loved it. I was excited to learn how to cook new things & try new flavors.
For lunch, I made the Mushroom Shepherds Pie. I was honestly very skeptical about this meal and wasn’t sure if we would like it, but it ended up being my favorite dish of them all. I will be making this again in the future for sure! There was just something about the mixture of spices with the vegetable medley mixed with the mashed potatoes made from scratch that still makes my mouth water just thinking about it.

For dinner, we tried the Warmed Butter Shrimp Rolls which was also delicious. I loved that purchasing these meals made me want to cook at home even more. I also liked slaw for the very first time, so that was impressive as well.
Fast forward to Thursday, which was the start of my extended weekend off of work. I enjoyed some relaxation in the morning, went for a beautiful 2 mile outdoor walk at the park with Jordan, and cooked a scrumptious Pecan Crusted Chicken dish with a lemon Dijon sauce + a side of roasted carrots and butter thyme biscuits.
After getting in a nice sleep in & enjoying some brunch, Jordan and I had a wonderful afternoon at the golf course. I hitched along and drove the buggy while he golfed the day away. It was such a nice way to enjoy the gorgeous weather together.
On our way home from the golf course, we swung by the house and were pleasantly surprised to see so much progress. We were able to walk around each room on the first and second floor. I was finally able to visualize what each space would soon look like and dreamt of the memories we would create in our first home.
We also grabbed some Natalita’s #3 to-go for dinner because it was way too late to wait and cook a meal. I was starving and totally demolished 3 chipotle chicken enchiladas on flour tortillas with a side of Spanish rice.

We spent Saturday relaxing together at home and it was so stinking nice! We had some documents to put together for the home loan, curbside groceries to pick up, and then a season of “The Sinner” to finish watching. We binged watched all 3 seasons of “The Sinner” within 2 weeks. Each season was so darn good, but I think season 1 has to be my favorite. I definitely recommend this show if you’re looking for a new Netflix favorite!
After getting our many tasks accomplished, Jordan and I spent the beautiful evening on our back patio grilling dinner and playing corn hole.
I was sad that Sunday was already upon us and that our extended weekend was coming to a close, but we had another great day. I got myself all ready with hair and make up done (such a hard task these days lol) then we went to run a couple of errands and have some Tex-Mex for Linner at El Tiempo. I enjoyed a virgin strawberry daiquiri and a half-order of chicken quesadillas.
As you can tell by week 17, my belly has been steadily growing and rounding. I have began to feel where our sweet boy is hanging out, which is mostly right on top of my pelvis and bladder making it hard to bend over/get up lol. I think I am starting to feel him move inside me as well. It’s been kind of tricky to tell for sure with this being my first one

Monday and real life hit so fast! I got a lot of studying done in the morning, coached in the afternoon, then completed a quick workout in the empty apartment gym that felt amazing!
Monday’s workout:
•3 sets of 15 bicep curls
•3 sets of 15 dumbbell chest press
•3 sets of 12 lateral raises (my shoulders are so weak).
•15 minute incline walk on the treadmill
Jordan and I had a meeting downtown this past Tuesday that lasted for a few hours and neither of us had eaten all day. We were absolutely starving when it was over and had been wanting to try this amazing looking grilled cheese place that happened to be within minutes of where we were. This place was AMAZING. I’m a huge lover of grilled cheese with tomato soup, so Twisted Grilled Cheese was a dream come true for me. I ordered the 5 Cheese Pepperoni Grilled Cheese with Tomato Basil Soup. The flavor of the soup and sandwich were incredible. They make their tomato Basil soup with a little bit of a kick and it was the bomb.com! Jordan tried The Smokehouse Brisket grilled cheese with some mac n’ cheese balls on the side.

We made a quick stop by the house on our way back to the apartment to walk around again. Just being there makes us so happy. We walked around in our baby boy’s room just visualizing what it will soon look like. I can’t wait to decorate his room once we move in.

Wednesday was incredibly busy with work, work, and a little more work. I threw together a quick dinner of Southwest Ancho Chicken with a side of brown rice & black bean mix. It was delicious! Jordan and I wrapped up the evening watching an episode of “The One” on Netflix.
Thursday was one of the longest days I’ve had in a very long time. Jordan and I had some important things to accomplish all morning/afternoon and once we were finally finished, we were so excited to see our sweet girl after 2 long weeks of not talking to or seeing her.
We decided to take Mila by the house to look at the progress they have made with the framing. She was so excited to walk around “her room” and what will one day be the baby’s nursery. My parents & youngest brother also joined us to take a look at everything. It was amazing getting to show them all our future home.
We wrapped up the night having some dinner on the outdoor patio at Baja Sur. We enjoyed some delicious Tex-Mex with gorgeous weather & I loved my refreshed glass of fresh pineapple juice that was dressed with Tajin seasoning. It was so nice being able to spend time with Mila and my family for what felt like the first time in forever!
