Good evening y’all & happy Friday! This week flew by like no one’s business. As I was making my breakfast this morning I realized that it was already Friday & I had no clue when I’d have time to write this recap, but luckily I ended up having a tiny bit of down time to get today’s post ready for you all.

After wrapping up last week’s recap, my husband left for a hunting trip so I sat & pondered what all I would do with this alone time that I am so not use to anymore. My first move was to enjoy a “treat” meal at Crust Pizza Co. along with some wine & reading time. I thoroughly enjoyed their BBQ Chicken Pizza & a glass of Cabernet.
I spent the rest of the evening reading, relaxing, and catching up on “Jane the Virgin,” which is such a cute show!
I had to work half of Saturday, but had some fun evening plans with my family later on. I met my Mom, Dad, and younger brother, Hudson for some Italian grub at Gianna’s Italian Kitchen. We split some calamari & bruschetta for appetizers and I enjoyed their amazing Eggplant Parmesan for my entree.
The fam also came by the apartment to spend a little more time together & to play some Game of Thrones themed Clue.
Sunday was such a fun day!! My sister, Bailey, & her girlfriend, Emily, hosted this month’s gathering for the girls & called it “BOOzy Brunch.” Everyone brought such fun & delicious dishes to share, we dressed in Halloween spirit (or spoopy as my sister would say), and played fun Halloween themed games like charades & bingo.
My hubby also returned home Sunday evening & boy was I excited to see him. It’s nice being able to go do our own thing from time to time, but being apart feels so foreign these days & I missed him.
Monday was filled with productivity & cooking. I got a bunch of chores done, conquered some work from home, and also made all my meals + snacks.
I decided to set 3 goals for myself for the week which began Monday morning:
1. Eliminate dairy from my diet. I’ve noticed since I’ve been eating less meat that dairy has been upsetting my stomach (probably because I’ve been somewhat relying on it), so I decided to go this entire week without it to see how I feel while giving myself a “treat” meal this upcoming Sunday if I choose. So far I can honestly say that not having dairy has made a big difference, but it has certainly been hard. Luckily there are great plant-based dairy options out there such as the Caesar dressing in the photo above & vegan mayo that I used for the deviled eggs, but the hardest part is finding things to eat at restaurants so far.
2. Accomplish 3 workouts outside of walking. My goal here is to try to add in 3 extra workouts such as skating, running, or weight training to my typical (almost daily) walks.
3. No weekday wine. I love to enjoy a glass of red wine with my dinner or while Jordan & I kick back to watch our shows, but I have noticed that I feel very groggy the following morning even if I just have a small glass the night beforehand, so my goal was to say no to merlot during the week & boy has it made a big difference.
I was very excited to set out 3 big, yet very achievable goals for myself and to carry them out through this week. My plan is to continue doing this to implement more and more healthy lifestyle changes & to also figure out what things work best for me.
Tuesday morning I was up bright & early for coaching & to get a little skate in. During a quick work break, I made my way to the park for a gorgeous 2.45 mile walk.

The rest of Tuesday was filled with work, so I was very excited to be home to cook some plant-based comfort food for the hubby & I to enjoy while watching “The Haunting at Bly Manor.”
This meal included roasted potatoes, baked zucchini & squash, corn, and ranch style beans. It was so delicious!

Wednesday started with an egg bagel for breakfast & as much work as I could possibly fit in before lunch time!

I had a fun lunch date with Jordan at The Annex Crafthouse. I devoured an amazing Buffalo Cauliflower Sandwich with French Fries & vegan ranch. The flavor & texture of this dish is amazing & I love how it isn’t overly filling like your typical fried buffalo chicken sandwich.
After filling my belly with amazing food, I made my way to the park for a 2 mile walk & some weight training by the water. It was so nice being able to conquer my entire workout outdoors with beautiful scenery.

For dinner, I whipped together some veggie stir-fry with shirataki noodles, garlic, zucchini, squash, broccoli, low-sodium soy sauce, sesame oil, and a little bit of sea salt.
We ate this dish while watching another episode of “The Haunting at Bly Manor” before calling it a night. I’d like to know what you guys think of the new season of Haunting. Jordan & I were huge fans of “The Haunting at Hill House” & we like this new season, but so far it isn’t nearly as good yet.
Side note: I did totally watch “Emily in Paris” on Netflix within about 3 days and was absolutely obsessed. Praying they will make a season 2!
Thursday was insane… I worked all day & when I wasn’t working I was almost getting run over by vehicles whether it was in my car or on foot. It was one of those days that you just want to fast forward through, but it ended on a very sweet note, so I shouldn’t complain too much. In between working (& almost dying), I managed to squeeze in a nice 2 mile walk at the park and whip together a tuna fish sandwich with Fritos for lunch.

I told you guys that Thursday ended on a sweet note. Jordan & I got Mila a day early this weekend compared to normal and we were so stinking excited! After Jordan picked Mila up from school, he brought her straight to the rink for a skating lesson with me. She seemed so happy to be on the ice & she is getting so much better.
After skating, we headed to Craft Grill for some dinner. I had one of the best meals I’ve ever had there, which is saying a lot since it’s one of our favorite places to go! I ordered their Australian Sea Bass (w/no lemon butter), Cilantro Lime Rice, & Grilled Asparagus. I also added some salsa verde to the sea bass since we took off the lemon butter & it added such a great flavor to the entire dish. YUM!
After a Friday morning of running around getting things done & things not going 100% according to plan, the 3 of us ended up at Crust Pizza Co. to fill our bellies with some scrumptious food. I ordered some spaghetti with a side salad while Jordan & Mila split an Alfredo pizza. Jordan’s half of the pizza had mushrooms & spinach added to it.
My food was very good, but I will be honest in saying that it was pretty darn hard to turn down cheese today.
Bonus Mama & Mila killing the twinning game in our brand new Pink Lily sweatshirts. Also, props to Jordan for being our personal photographer for the day. Hopefully over time we will get this posing thing down lol.
We had big plans to take Mila to this amazing ranch today where she could pick out a pumpkin & enjoy all the fun activities that the ranch had to offer, but unfortunately the weather had other plans & totally rained (literally) on our parade. So instead of letting it put us down we decided to pivot our plans & hit up our local H-E-B where we found some beautiful pumpkins and then we spent the rest of the afternoon costume shopping for Halloween. We ended up having a very fun-filled day & it’s not even over yet.
