Fall Fun: Drive-In, Ren-Fest, & Nice Weather!

Hey y’all & happy Friday! I’m very excited to be here with you guys to share what all me & my little family have been up to this past week. We had a super duper fun weekend after I left you guys last & I cannot wait to share it.

After leaving you guys last week, Jordan & I made our way to get our sweet girl, Mila, for a very fun-filled weekend.

The 3 of us joined some of our friends & their sweet kiddos for a night at the drive-in to watch “Hocus Pocus.” The weather was absolutely perfect that night & we had such a great time. Funnily enough, all of the kiddos either fell asleep or preferred to watch something else, so it ended up being the adults rewatching “Hocus Pocus,” which I certainly did not complain about!

Mila & I enjoyed a restful Saturday morning with some yummy breakfast before getting our day going while Jordan wrapped up some work.

Jordan & his father joined together to create a company called, Muse Custom Roofing, and Saturday he worked on their very first job. We are so excited for this new adventure & I cannot wait to see where it leads him. Their company is family owned & operated out of Tomball, TX. Later that afternoon, we made our way to the Texas Renaissance Festival. The Ren-Fest has always been one of my favorite Fall activities & I have loved being able to make memories here with Jordan and Mila the last few years. We had such a great time sight-seeing, cheering Mila on as she rock climbed & jousted, and watching the shows. It also felt great to do something outdoors even though it was a bit warmer than we were expecting.

We spent most of Sunday relaxing & spending some time with each of our families. After Jordan & I said “goodbye for now” to our girl, we made our way to Natalita’s #3 for some Tex-Mex & margaritas to close the weekend. The two of us split some beef fajitas.

I whipped together a plant-based burger to eat in the middle of my Monday. I’m going to be really honest in saying that this past week (starting with Monday) wasn’t my best week. I struggled big time to find motivation in getting things done whether it be cleaning, work, or exercising and it left me feeling very defeated most days. I tried to get some chores & tasks done around the apartment during the day on Monday before making my way to Mila’s dance class later.

Mila has been loving her dance classes & I honestly see so much potential in her. It has been a blast getting to watch her do something she enjoys as well as getting to soak up a few extra minutes with her each week. 🖤

After dance class, Jordan and I went to one of our favorite local restaurants, Craft Grill. I enjoyed some Proverb Cabernet & we split some ATX Avocado Toast for our entree. It was delicious like always.

I tried to be a little bit more productive in between working all day on Tuesday. I was very proud of a new dish that I made for dinner that evening. I found the recipe on Pinterest & it is 100% a keeper. This was a Creamy Tuscan Salmon dish that I paired with spaghetti noodles and it was to die for. I will definitely be making it again and plan to try it with dairy-free heavy whipping cream next time + double the sauce ingredients to have extra for the noodles.

We ate this delicious meal while we watched the first 2 episodes of Yellowstone. I’m starting to realize what all the hype is about now.

I have Wednesday mornings off from work, so I spent the day trying to get some more tasks done. I took a little break to enjoy some spaghetti & garlic toast on whole wheat bread before making my way to the rink to coach.

After coaching, Jordan and I went to Shogun for some dinner. I was absolutely craving fried rice, so fried rice was what I got! I ordered some spicy garlic edamame & the both of us split a large order of fried rice. It was so good!

These happened to be the only photos I took this past Thursday, but I actually had a pretty good day. I spent most of the morning working & had a long enough break to get a nice walk in at the park & to bring Jordan some breakfast to work.

Later in the evening, we were able to spend a little time with Mila. We took her to Jordan’s parents and had a great time visiting, eating dinner, and practicing Mila’s splits (she is obsessed with achieving a full split) before having to say “goodbye for now” again. The goodbye’s are always hard, but we wouldn’t trade the little time we get with Mila for the world.

Today has been a nice & relaxing day so far, but I honestly cannot believe it’s already Friday. This week flew by! I spent the morning at Coco Crêpe’s enjoying some delicious food & coffee while getting some reading time in. We had the apartment professionally cleaned & it felt so nice to come home to a super clean place.

I’ve got a couple of plans & a little bit of work over the weekend, but my main goal is to simply relax & reset to get ready for a more positive/productive week ahead. I try to remind myself that it is 100% normal to have a rough week from time to time, but I personally want to try my best to live each day to the fullest & when I have a negative mindset it can be so hard to accomplish that. I’ve been feeling much happier the last couple of days and I hope for that to continue and flourish over the weekend. I have some big goals that I want to carry through with and accomplish overtime. I pray that each day I get a step closer to achieving them & to be able to continue to share my life journey with you all.
