Hey y’all & happy Friday! I hope that each of you have had a wonderful week and are just as excited as I am to embark on a fun-filled weekend.
The beginning of this Fall season + amazing weather (for Houston at least) has me so giddy & ready to enjoy everything this month of October has to offer. By the way, can y’all believe it’s October already? I swear this year has been oh so slow, but also flown by all at once.

The hubby & I were about to head out for our date night when I left y’all last, so that’s where we will pick up today.
Last Friday evening, Jordan & I went to El Tiempo in the Vintage for some delicious food & drinks. Most Friday’s you will typically find us devouring some Tex-Mex, so we decided to make a date night out of it this time. I enjoyed 2 cheese enchiladas & their house half & half margarita (no salt 😉) and Jordan ate their crab nachos & enjoyed a frozen strawberry with just a hint of strawberry and also no salt.
It was a fun night of filling our bellies with scrumptious food & dreaming about life together. I always love some good quality with just the two of us!
One of my oldest & dearest friends got married that following Saturday & her wedding was breathtaking. It was so much fun getting to celebrate their big day with my family + be able to catch up & see so many old, great friends of mine from the skating world. I also had the greatest time getting to dance my booty off with Jordan on the dance floor!

After a much needed sleep in on Sunday morning, I jumped right into getting the apartment ready for Fall Girl’s Night! While I was running around the apartment like a chicken with their head chopped off, my sweet husband made me an omelette with 2 eggs, shredded Mexican blend cheeses, and red bell peppers for breakfast. I was starving & this absolutely hit the spot!
These awesome girl’s & I started to make monthly girl’s night a thing last month, so I decided to host September’s get together and of course make it “Fall” themed. I made a deliciously strong Fall sangria, pumpkin pie cheesecake dip, bruschetta, & pasta salad. The rest of the gang made some amazing food as well! There were spiced vanilla cupcakes that looked like tiny pumpkin pies, a sausage & cream cheese crescent roll, buffalo chicken dip, Brussel sprouts, blackberry & gruyère toast, & pumpkin fluff dip.
We had such a fun night eating amazing dishes, sipping Fall flavored drinks, having fun conversations, and playing games. I can’t wait for the next one!

I spent most of Monday getting things done at home. I made myself an egg bagel & coffee for breakfast before completing some tasks and getting chores done.

Jordan and I watched Mila’s dance class later in the afternoon & then met our friends, Lauren and Jarrod, at Craft Grill for dinner. I enjoyed a kid’s grilled cheese + a couple glasses of Cabernet.
Tuesday was such a long day. I was up at 4am to coach all morning & decided to try to skate by myself for the first time in what seemed like FOREVER. I lasted about 18 minutes, 1. because my blades need sharpened like crazy (having extremely dull blades makes it very difficult to skate) and 2. simply because I’m severely out of skating shape lol. It was really nice being able to skate by myself though. I need to get my blades sharpened and make it happen way more often.
For dinner, I made a veggie medley with roasted potatoes & ranch style beans. It was very filling & delicious.

Wednesday was another day full of getting chores & tasks done + coaching. Once I got home from work and grocery shopping, I made some yummy plant-based burgers & Alexa’s onion rings for Jordan & I to have for dinner. Plant-based burgers hit the spot every single time!
I enjoyed a very gorgeous morning bringing in the month of October on Thursday. I had coaching from 5am-8:15am, so I grabbed a Pumpkin Cream Cold Brew from Starbucks on my way to the rink & then I had the most beautiful 3 mile walk in between lessons at a nearby park. We had a cold front here in Houston, so most days lately have involved 53-60 degree weather in the mornings/nights & 70-80 degree weather during the day, which I am 100% here for. 🧡🍂
We enjoyed dinner at our place for our 2 hours with Mila on Thursday evening. While Jordan went to get Mila, I whipped together some Cajun Alfredo pasta, garlic toast, & an appetizer of olive oil, balsamic vinegar, & Italian seasonings. It was so nice getting to spend a little bit of time with our girl.
This Friday morning started off a little later than I had originally planned, but I still got it going on the right foot. I started my day with some Pumpkin Spice Coffee (love this creamer by the way) & getting Jordan’s breakfast ready to take to work. I like to start my morning’s off relaxing with a cup of coffee when I have the time to.
Once I got the caffeine in my system, I was ready to go and conquer a workout. I started off with an outdoor run/walk that felt amazing. Then I made my way to the apartment gym for some much needed stretching & a quick weight training session.
Today’s weight training sesh included:
•3 sets of 20 Squats on the Smith Machine
•3 sets of 50 standing Russian Twists
•3 sets of 15 (each leg) Fire Hydrants
•3 sets of 10 Ab Roll-Outs

I devoured my go-to egg bagel once my workout was complete & before spending the rest of the day tackling tasks and getting some time consuming chores done.

For lunch, I whipped together some spaghetti with the leftover angel hair pasta from the night before & made some garlic toast with whole wheat bread, plant-based butter, and good ol’ garlic salt.
Now that today’s recap is all wrapped up, it is time for me to get ready for some fun plans we’ve got for this evening. I hope that you guys enjoyed today’s post & have a wonderful weekend. I can’t wait to be back to share what we’ve got going on. Have a great Friday & happy October y’all!
