Good evening y’all & happy Wednesday! I hope each of you have had a wonderful week so far. I can not believe it is already September!!! September is one of my favorite months & it’s also my birthday month, which makes it even more exciting.
I want to take a second to say that my prayers are with anyone who was impacted by hurricane Laura. Houston ended up extremely lucky and wasn’t impacted by the storm, but I know that other states & countries, like Haiti, weren’t as fortunate. I am so thankful to see so many different organizations, companies, and people coming forward to help those in need during this time.

After I left you guys last week, I made my way to a nearby Kroger to stock up on some non-perishable & non-refrigerated food items for the storm that didn’t even make it our way. I also had to snap a photo of the cute Fall decor & goodies the store had on display. It made my heart so happy.
While it sucked to spend money on these foods for what seemed like no reason, I was glad that I was able to find a bunch of items that we typically eat in pre-made form + some yummy canned beans & vegan chili’s to try!
Later that evening, Jordan and I hit the gym for a true “sweat sesh.” I was not feeling it at all, but Jordan was a stellar workout buddy & pumped me up enough to do a little bit of running + a lot of walking for 1.75 miles.
We ended the evening with a delicious dinner of Brussel sprouts, garlic & herb couscous, and chili seasoned pinto beans while we watched an episode of “The Umbrella Academy.”
I spent Thursday morning making some deviled eggs while getting some cleaning & tasks done around the apartment. My go-to deviled eggs recipe is super simple! I typically mix the egg yolk filling with mayo and mustard (I used Hellmann’s vegan mayo this time & it was amazing) + sprinkle Tony’s on top at the very end to give the eggs an extra kick. These are one of my favorite snacks & breakfasts.
Thursday evening, we got to spend a couple of hours with our sweet Mila. 2 hours is never enough time with this one, but we try to soak up every minute that we get with her.

Friday was spent 100% at home, which I was 100% okay with. I spent the day time getting more chores/tasks done & then enjoyed the evening time with Jordan by watching shows on Netflix, playing Call of Duty together (a new favorite thing if you can’t tell by now lol), and making some scrumptious homemade Alfredo pizzas to devour. It was a nice & peaceful day!
I had to wake up SUPER early, I’m talking 4am early, to coach one of my favorite girls on Saturday morning. My student, Lauren, that I co-coach with one of my old coaches, passed a big test in the figure skating world. I was extremely proud of her & so happy for her. It was definitely worth the dark circles under my eyes. I also got to squeeze in a breakfast at CoCo Crêpes where I had an amazing crêpe filled with eggs, shredded cheese, and topped with a mushroom pesto sauce + a delicious iced hazelnut latte before making my way back to the rink to Coach another one of my favorite girls!

After coming home and taking a much needed nap, I got in a super quick bike ride before getting myself cleaned up for date night!
Jordan & I made our way to one of our favorite Tex-Mex spots for a fun night together! We enjoyed each other’s company (obviously 😘), XL margaritas, and amazing food! I ordered a simple cheese quesadilla & it was delicious.
Sunday morning was a very exciting day. Jordan & I slept in a bit, enjoyed egg bagels & coffee for breakfast, and then made our way to church for the first time in several months. It was the first weekend our church had reopened & we were stoked to go back. It was certainly a different experience being that there were much less people there than usual and obviously everyone was required to wear masks, but it was amazing to be back!

I whipped up some yummy & very filling plant-based burgers for Jordan and I to enjoy for lunch before we made our way out for our girl’s and guy’s night!
My good friend, Lauren, decided to throw together a Sassy Sangria Soirée on Sunday evening. We all got together to enjoy the amazing bites & killer sangria that Lauren made + we all played some fun card games together while the guys went out to golf. It was a super fun evening for everyone & we plan to try and do it way more often!

Monday was another busy day getting things done at home. I took a little break to meet Jordan & his sister, Brittany, at Panera for lunch. I had a delicious creamy tomato soup + a Caesar salad. It definitely hit the spot.
The rest of Monday included more tasks, some much needed rest, & leftovers for dinner. So interesting, I know.
I had a wonderful morning on Tuesday. It was the very first day of my new Fall coaching schedule, so once I wrapped up my morning lessons, I met Lauren at a nearby park for a walk around the trails + another great breakfast at CoCo Crêpes. I ordered an egg crêpe with feta cheese & mushroom pesto sauce + an iced hazelnut latte.

I tried making a new meal on Tuesday evening and it was a huge hit!! I used the Zatarain’s Dirty Rice Mix with Impossible Meat + a side of chili seasoned pinto beans. The dirty rice with plant-based meat was WAY better than I expected it to be. I hardly noticed any difference to having actual ground beef, so I am very excited to give some other recipes a try. I try to base most of our meals with veggies, a complex carb, and beans but it’s fun to make things like burgers or what not with these plant-based meats especially when we have a craving for it.
This morning was such a slow one for me & I felt super off. I actually made coffee & completely forgot that it was sitting there for like 20 minutes or so. Once I finally got some coffee in my system, I was able to accomplish laundry, dishes, deep cleaning the bathrooms, and so much more all before heading to work this afternoon. It just took me a little while to get there lol.
I am now feeling super proud of myself for making it into the gym this evening to accomplish some cardio & legs. For cardio I spent 15 minutes on the treadmill cycling between walking & running for about 2 min each.
My leg circuit included:
•3 sets of 10 side lunges
•3 sets of 10 step-ups
•3 sets of 10 kettlebell swings
My legs were shaking like crazy while I walked back home, so I took an epsom salt & lavender bath to try to ease the pain that will surely come. Now, I am finishing up my dinner of rotini noodles with Italian salad dressing while I wrap up today’s recap.
