Hey y’all & happy Wednesday! I hope you guys are doing well and staying safe out there. Here in Houston, we are preparing for Hurricane Laura & praying that the storm doesn’t hit us too hard, but my prayers are with anyone that could be effected by this crazy storm.
This past week has been a pretty fun one trying to fill our time with adventures throughout the weekend with Mila & also trying to find joy in the day to day part of life. It’s crazy to think that this is the last month of the summer season, but I am so FREAKING excited for Fall. Sadly, we don’t experience Fall weather for a couple more months (at least), but I’m still super stoked for all the Fall things.

I was wrapping up dinner when I left you guys last recap, so that’s where we will pick up today.
I have really been digging potatoes, beans, and veggies for dinner lately, so I made some roasted white potatoes cooked with Worcestershire, Tony’s, Italian seasoning, and Old Bay Garlic & Herb seasoning to pair with some sautéed broccoli & ranch style beans. I also added some A1 on top of my potatoes & beans. This meal was so comforting & delicious!

I stayed home all day Thursday working at home & getting chores done around the apartment. Jordan and I got to spend some time with Mila later that evening, so I made some Caesar salad & homemade Alfredo pizzas for us to enjoy together. Mila started her dual language kindergarten program through virtual learning the Monday prior and had so much fun showing us how she could count to 5 in Spanish already.
Friday was another day of getting tasks done at home. I made myself an egg sandwich with coffee for breakfast & a plant-based burger for lunch. I was really loving plant-based burgers last week lol!

We picked Mila up on Friday evening & headed straight to a nearby movie theater that was FINALLY open again!!! I was so excited to find out the theater reopened & that they were replaying all of the “Harry Potter” films, so we made plans to meet our friends Lauren, Jarrod, and their little one, Dalton, to watch “Harry Potter and the Prisoner of Azkaban.” It was so fun getting to watch a movie in the actual theater again.
We had a very fun day at Galveston Beach on Saturday with my aunt, uncle, little cousins, and grandparents. It was so nice getting away for the day and watching Mila have a blast playing in the sand with her cousins and going out into the ocean water. Galveston is definitely not a “pretty” beach by any means, but it was still nice to be able to do something fun & outdoors for the day + it felt great outside.
On Saturday evening, my Dad (Joe Schurman) was featured on “Unidentified: Inside America’s UFO Investigation. Episode-Sightings Surge.” It was so awesome seeing my own father on television being able to share the amazing things he has been working on with the world. If you guys are interested in UFO research at all, you should check it out!

Jordan, Mila, and I enjoyed a slow Sunday morning with each other before having some friends over for a pool day. For lunch, we ordered Marco’s Pizza & created a customized pizza with white sauce, parmesan crust, tomatoes, spinach, red onion, and pineapple (on half because I’m not a weirdo and don’t like pineapple on my pizza lol). The food was delicious and it was a super fun day being able to spend time with one of Jordan’s lifelong friends, his fiancé, and their two sweet kiddos that Mila loved to play with. It was the perfect way to wrap up a fun-filled weekend.

I worked for a bit late Monday morning, so I had some time to pick up some breakfast from Starbucks (my go-to is the Gouda breakfast sandwich with no bacon & a vanilla sweet cream cold brew) & listen to Darin Olien’s podcast on my way to work. I absolutely loved “Down to Earth with Zac Efron” on Netflix and have been super fascinated to learn anything else Darin has to share after finishing the show.

I spent the rest of Monday getting some work done at home, grocery shopping, and also took some time to get a nice 1 mile outdoor walk in around the apartment complex. It was fairly overcast so luckily it wasn’t too hot of an afternoon walk.

I enjoyed breakfast for dinner by making my favorite egg bagel on whole wheat with some Melt, plant-based butter.
After dinner, I took a lavender epsom salt bath & then played a couple rounds of Team Deathmatch on Call of Duty with Jordan before calling it a night.

I woke up super early on Tuesday morning to have some PB & Nutella Toast on whole wheat bread paired with a cup of coffee before heading out to work.

I had an 1.5 hour break between skating lessons, so I made my way to the park to get in a beautiful outdoor walk. It was a gorgeous & cooler morning than usual, so I very much enjoyed it & it really helped me wake up and get my happy hormones flowing for the rest of the day.
For lunch, I whipped together spaghetti with garlic toast. It was delicious & oh, so filling.
Tuesday was also PSL Day, which is one of my favorite days of the year!! Every year I get together with my family & go to Starbucks to sip on this joy of a drink. It made me so happy getting together with my Mom & sister to carry out our PSL tradition.
I convinced Jordan to workout with me later that evening & it was the first time we’ve been to the apartment gym in months. Every time we’ve tried to work out in there since it re-opened, there hasn’t been enough room due to capacity limits, so it was awesome being able to walk in and us being the only ones in there!
First we conquered a little bit of cardio. I did an incline walk on the treadmill while Jordan did an incline walk & a little bit of running. Next, we accomplished a killer biceps & back circuit!
Tuesday’s Back & Bicep Circuit:
•Incline Bench Curl
•Inverted Row on the Smith Machine
•Barbell Bicep Curls
•One Arm Cable Row
We repeated this circuit 3 times & tried to do 5-8 heavier weight reps. We definitely felt a good burn.

After working out & getting cleaned up, I whipped together a delicious meal of sautéed potatoes & zucchini + ranch style beans for dinner. We ate while watching some of the “World’s Most Wanted” show on Netflix & we also played a couple rounds of Call of Duty together before calling it a night.
I had a very, VERY early morning of coaching today, so once I got finished, I made my way to the park to try and get in one more outdoor walk before Hurricane Laura makes her debut. My entire walk was filled with grey skies, Harry Potter movie soundtracks playing in my ears, and a ton of humidity. 90% humidity to be exact! I am so glad I made it out there before the rain comes this way. I feel so much better when I spend some time moving outdoors.

Now that today’s recap has come to an end & Hurricane Laura is predicted for be a category 4 hurricane that is supposed to hit this evening/early Thursday morning, I am going to be spending some more time at the grocery store stocking up on some water & non-perishable foods to have on hand just incase.
