Good evening y’all & happy Wednesday! I hope each of you have had a great week, so far. I had a pretty awesome week & a half hanging out with my hubby, getting through day-to-day life, and also being apart of a super fun wedding. I’m very excited to share today’s recap with you all & hope you enjoy it.

After I left you guys last, I got in a nice 1.27 mile walk, some stretching, & a quick circuit.
My Ab Circuit Included:
•3 sets of 50 bicycle crunches
•3 sets of 15 regular crunches
•3 sets of 50 standing Russian twists
It was a good core burn!
After completing my workout, I devoured an egg bagel for breakfast & then tested out some new hair products for my first hair wash after my appointment. My hairstylist recommended using Olaplex shampoo, conditioner, and hair mask (1x per week) since my ends were being lightened. This stuff is amazing. I can feel it keeping my hair healthy & strong plus, it smells amazing.
Jordan & I spent the evening checking out a nice open house followed by margaritas at El Tiempo & dinner at The Annex Crafthouse. It was a super fun night!
We also had a great time on Saturday checking out a few more open houses, grabbing some grub & beers while watching the Astros, and ending the evening at the pool with our neighbors.
I relaxed most of Sunday, not feeling 100%. We ended the weekend grabbing dinner with our friends, Lauren & Jarrod, at Natalita’s for some Tex-Mex food & bomb.com margaritas!
I spent most of Monday doing some chores & getting some tasks done at home before hopping on my bike for an evening ride. I also cooked one of my new favorite meals of roasted potatoes, ranch style beans, + seasoned & baked veggies. It was so stinking good! We ate this yummy meal while watching another great episode of “Down To Earth With Zac Efron” then called it a night.
I had a very early morning of coaching on Tuesday & filled my break with a nice 2 mile walk & tried out the peanut butter flavored RXBar for breakfast, which was delicious!
I spent the rest of Tuesday getting things done around the apartment before we had fun plans to surprise one of our neighbors for her birthday. Her sweet husband got all of her friends together to distantly sit outside of their apartment patio & enjoy pizza together while we celebrated her special day.
I enjoyed a slow Wednesday morning while I ate a slice of peanut butter & Nutella toast with a side of fruit & a cup of coffee to start my day.
I rocked a fun updo while I worked up a sweat getting in a bike ride & quick at home circuit. I also devoured a big bowl of pasta salad for lunch!

•3 sets of 20 mountain climbers
I whipped together some sautéed veggies & couscous for dinner later that night. This mixture of Brussel sprouts, bell peppers, and spinach/kale mix is another one of our favorite veggie dishes.
I had another early morning of coaching on Thursday, so I ate some peanut butter & Nutella toast with some coffee before heading off to work. In between lessons, I had a pretty long break so I took the time to get in a nice 2 mile walk at the park before wrapping up work for the day.
After finishing up work, I met Jordan at Torchy’s Tacos for an early lunch. I ordered their chips & queso, a potato, egg, and cheese breakfast taco, and a small peach habanero margarita. It was delicious!
We got to spend a little bit of time with our sweet Mila on Thursday evening. I decided to straighten my hair for the first time since getting it cut & loved how it looked (however, I still like it curled a little better lol).
Friday was a blast of a day celebrating the gorgeous bride-to-be, Lauren. I met up with her & the rest of the bridal party for some lunch at Brickhouse Tavern where I enjoyed some amazing buffalo cauliflower bites, fries, and mimosas then we all got some much needed pedicures. I hadn’t gotten a pedicure since before the pandemic began, so it felt amazing!
Saturday was rehearsal day!! We had a wonderful time getting to see the wedding venue for the first time & practice walking up and down the aisle to prepare for Jarrod & Lauren’s special day. Afterwards, was their rehearsal luncheon at Frio Grill & the food was amazing. The mac n’ cheese balls were incredible & I also enjoyed the first steak that I’ve had in months.
Jarrod, came to stay the night with us the evening before the wedding. Jordan & Jarrod have been friends since the 5th grade and were now both best men in each other’s weddings. It was such a special weekend & also so much fun having Jarrod come stay the night at our place, even if he had to sleep in Mila’s princess bed for the night lol.
I made some veggie tacos for us all to eat for dinner & we enjoyed a fun night of video games, looking at houses on Zillow, having fun conversations, and starting “Project Power” on Netflix.
The next morning, I was up bright & early to start getting ready for their big day! We all got dolled up at Lauren & Jarrod’s house, enjoyed some Whatabruger Taquito’s, and watched “The Greatest Showman” while we relaxed and prepared to make our way to the venue. Lauren looked absolutely gorgeous!!!
One of the biggest highlights of the day was Jarrod & Jordan’s “first look.” Jarrod was 1000% expecting it to be Lauren, but we all had the biggest laugh as Jordan (very willingly) dressed up like a bride with a wig, veil, flower crown, earrings, and all to surprise Jarrod. It was definitely a moment that will NEVER be forgotten.
It was such a beautiful & fun wedding. These two were supposed to be getting married in April, but due to the pandemic they had to push their wedding back to August. Even though it sucked to wait, I am so happy that they had the wedding they dreamed of and truly deserved. I am so happy for the both of them & it was an honor to be apart of their day.
This past Monday felt 100% like a Sunday, so we pretended like it was. Jordan and I both took off work & we spent the day relaxing, watching TV, and playing Call of Duty together. We got into the veggie taco leftovers for dinner & I made a burrito bowl out of it, which was delicious!

I enjoyed a nice breakfast of 2 whole eggs + 1 egg white on 2 slices of whole wheat toast with a cup of coffee before getting my day started.
I decided to try out a new park for my outdoor trail walk this morning. I’m glad that I tried something new and I loved how shaded the trail was, so it wasn’t nearly as hot as usual, but it was certainly different than the park I’m use to.
I spent the rest of my day getting some work done at the apartment & I also enjoyed another delicious plant-based burger for lunch. As you can see, I love me some condiments & pickles lol.
