COVID-19 Part 5: More Nature Walks, Family Time, & Yummy Eats

Hey y’all & happy Wednesday. I have had a pretty slow start to writing today’s recap. I am currently eating leftover pizza & drinking a cup of coffee while Harry Potter and the Order of Phoenix plays in the background. I have been falling in love with the Wizarding World books & movies all over again lately and I thought this movie was fitting as it’s about to start down pouring here in Houston.

I hope that each of you are doing well and surviving the pandemic with your sanity still intact. My thoughts and prayers are still with everyone enduring hardships throughout this time and my heart is especially going out to those harmed/effected in Nova Scotia this past weekend. The world can be such a cruel place at times, but it is how we react to the cruelty that makes all of the difference.

I woke up bright & early on Thursday morning for another day on the trails. No matter how tired I’ve been, I have looked forward to starting most of my days off at the park. I stopped by Starbucks on my way there to grab a vanilla sweet cream cold brew & a reduced-fat turkey bacon breakfast sandwich.

I was so proud of myself for accomplishing 8.04 glorious miles on Thursday morning. I ran 1.10 miles of it & walked the rest. It felt amazing adding in some running to all of my walks last week. As of right now, I’m starting off super easy by only running in 0.25 increments and really listening to my body when it comes to mileage and speed. I love the feeling of running and the soreness that comes with it (as weird as that sounds lol), so I’m excited to dip my toes back into the running waters and let my body lead the way.

Once I got home, I enjoyed some of the Chicken Ring that I made the evening before, some sliced strawberries, and a cup of coffee. This batch of the chicken ring was very tasty, I just didn’t make enough filling for the entire thing. I am working on perfecting this recipe and even trying out different ways of making it, so once I’ve got something stable that I really enjoy, I will share it with you all.

We spent Thursday evening with our sweet Mila over at my parents house. She had the greatest time playing & jumping on the trampoline with my youngest brother, Hudson.

Jordan and I had a pretty busy Friday working on a project together. I whipped together a delicious breakfast for each of us to stay fueled through it all. I made Jordan a scrambled egg sandwich on wheat bread & I enjoyed my go-to egg bagel. I also sliced up some fresh fruit while my sweet husband made us both some coffee.

We picked up Mila on Friday evening & made our way to Jordan’s parents house for dinner & games. Jordan’s mother, ShaRon, made us all a delicious lasagna to eat.

Jordan, Mila, and I had an incredibly relaxing Saturday. We went for a nice walk while Mila rode her bike, I decorated Mila’s nails with her new JoJo Siwa nail kit, and Mila & I played Barbie’s together up until it was dinner time.

I made some spaghetti for us all to eat while we watched Harry Potter and the Deathly Hallows part 1. I shared recently that I began reading the first Harry Potter book to Mila before bed & she has loved it. I honestly had worried that she might not love it yet since the wording can be mature & might not make complete sense to her yet, but she has asked me to read it to her every night she spends with us and it has been such a special experience to share with her. I think that’s the reason I’ve fallen even more in love with the stories now that I’m able to share it all with Mila. The Harry Potter/Wizarding World stories offer such a wonderful escape from the craziness in the world while also teaching good life lessons. I loved growing up watching all of the movies with my father, reading the books when I got older, and now sharing this experience with Mila. ✨

Sunday was a super nice day as well. I started my morning off enjoying my coffee & reading more of “Own Your Everyday” by Jordan Lee Dooley on the outdoor patio before it began pouring rain.

I made some tuna fish sandwiches for Jordan & I to enjoy for lunch. I love mixing canned tuna with miracle whip & mustard and serving it on whole wheat bread with some Fritos. It is so yummy!! Also, a pickle is always a great addition to any sandwich. Have you ever tried zesty pickles? They’re amazing!

We all spent Sunday afternoon back at my parents house for some fun. Mila & Hudson played non-stop & the adults enjoyed a fun game of Phase 10.

After saying our “goodbye’s for now” to Mila, Jordan and I picked up some dinner from a couple of our favorite local restaurants. Jordan picked up some sushi from Shogun & I ordered a BBQ chicken pizza from Crust. I love this BBQ pizza so freaking much! We ate our grub while watching “Ford vs Ferrari.” That movie was so good!! Jordan had been wanting to watch it since the trailers were first shared & I always had it on the back burner of my movie lists, but I decided to give in and watch it Sunday night & do not regret it one bit. It was one of the best movies I have seen in a long time with incredible acting. The whole movie had me on the edge of my seat & even in tears at the very end. I highly recommend giving it a watch!

I started Monday off with a 2.71 mile walk. I was feeling a little sluggish Monday morning & decided to walk the entire time. It was another beautiful morning. I was starving by the time I finished & super thankful I brought a banana with me just incase.

I enjoyed a delicious egg bagel & coffee once I arrived home and spent most of the day working on cleaning up the apartment.

Monday evening, I had plans to meet my sister, Bailey, and good friend, Lauren, for a quarantine girls night. We had dinner & played a few card games while the boys got together for a video game night. It was fun doing something a little different & enjoying some simple girl time for a few hours.

I went for a short 2 mile walk on Tuesday morning followed by some stretching. I woke up feeling super crummy & had zero energy. It was honestly the first time I drove to the trails and didn’t want to get out, but I knew it would help me to get a little movement in no matter how I felt, so I went for one lap around the trails and enjoyed the cool weather & scenery. It wasn’t anything special, but I’m proud of myself for simply getting out of my car & going for a short walk even though my mind was telling me “no.”

I spent the rest of Tuesday resting. I took about a 2 hour nap, watched TV, and even played a few video games with Jordan. I seriously had no energy. It was so strange. Jordan got me out of bed before dinner to go for a super short walk around the apartment complex. I’m very thankful that we got out because it was nice to get some fresh air & we even bumped into our favorite group of neighbors. I can’t wait for the pool to open back up & summer to be here so we can all get together again for our pool days and “family dinners” like we have for the last 2 years. I cannot wait for Jordan & I to buy a house one day, but I have loved living at this complex and making such great friends in our neighbors.

I woke up bright & early again this morning. I was super sleepy, but felt so much better than the day before. I picked up some bacon & cheese egg bites and a vanilla sweet cream cold brew from Starbucks before hitting the trails.

I had a very enjoyable 4.02 mile walk on this gloomy Wednesday. The skies were grey, so I naturally listened to all of the Harry Potter movie soundtracks for my entire walk. It was so peaceful. I also enjoyed some stretching with a gorgeous view of the water & grey sky.

I plan to relax & get some chores done for the rest of the day.
