Hey y’all & happy Wednesday! I hope that each of you are doing well & had the best Easter possible during this time. I woke up very excited this morning to share this week’s recap with you all & hope that you enjoy!
Today is a strange day as it marks my 3rd week of not working. I have been feeling much more positive and hopeful this last week, but everything still feels odd & it’s becoming harder to remember what daily life was like before all of this started. I’m sure many of you are on the same boat as me and are trying to make the most of each and everyday.

After finishing up last week’s recap on Thursday, I headed out to my favorite park for a 3 mile walk. It was a very hot day & I even got a little sunburn on my shoulders, but it was so nice being able to enjoy the outdoors & the sunshine.
We got to spend a couple of hours with Mila on Thursday evening, so once I got cleaned up we made our way to get her. We spent some time at Jordan’s parents house with her and played Twister most of the time. I forgot how uncomfortable that game was, but she loved it so it was worth it!

I spent most of Friday relaxing & working on projects until we made our way to Jordan’s parents house. We enjoyed a delicious home-cooked dinner, spent time outside, and played some fun board games.

Jordan & I enjoyed a very relaxing start to our Saturday. I made some breakfast with farm fresh eggs, which I had never had before and they were amazing. You all know how much I love breakfast food…Farm fresh eggs are a game changer & I now have dreams of having our own hens & chickens one day.
I made an bagel with 2 eggs & melt probiotic butter. I also enjoyed my go-to at home coffee using Donut Shop’s regular blend & Coffee Mate’s Italian Sweet Cream creamer.



Later that afternoon, Jordan and I headed out for a nice outdoor walk. We drove all the way to my favorite park which is about 20-30 minutes from where we live to find out it was closed… I hadn’t heard that the parks were closing for Easter weekend, so I was pretty bummed, but I remembered that there was a trail at a Fallen Warriors Memorial nearby, so we made our way there. The scenery & trails weren’t as nice as the Kickerillo-Mischer Preserve, but it was still nice to get outside together & enjoy a 1.65 mile walk. The Fallen Warrior Memorial was also really neat to see.

Saturday evening, Jordan grilled some amazing steaks while I whipped together some Trader Joe’s mashed cauliflower, corn, and warmed up some leftover boudin. It was a very warm & delicious dinner.



We spent Easter Sunday with each of our families. We started off the day at my parents house having brunch, watching church on TV, having a fun zoom call with the rest of the fam, and enjoying an egg hunt together. Jordan found the golden egg!!!
Later that day, we made our way to Jordan’s parents house for Easter dinner. His parents made lamb chops, roast wagyu, cooked potatoes, sautéed veggies, and elote. It was delicious! We all went for a golf cart ride around the neighborhood followed by some TV time after filling out bellies to the max!
It was a strange Easter not being able to physically attend church or see all of our family in person, but it was still a wonderful day being able to celebrate our Lord & Savior, especially at this time.

I woke up to some surprisingly cooler weather on Monday morning, which made me so excited. For breakfast, I enjoyed peanut butter & Nutella toast on wheat bread and a cup of coffee.
I spent most of Monday working on some things at home until Jordan & I headed out for an evening walk.


Before sunset, Jordan & I enjoyed a beautiful 2 mile walk at Kickerillo-Mischer Preserve. It felt amazing outside and we had a great time enjoying the scenery together.



I went back to the trails as the sun was rising on Tuesday morning with 2 goals in mind. I wanted to get in 1 mile of running & complete 3 laps of the trail. I accomplished both goals and ended up running 1.25 miles. It felt incredible to run again and enjoy the cool weather. I loved every single minute of it!

I made my way home to enjoy some breakfast before continuing on with a productive day. I made an egg sandwich with 2 farm fresh eggs & wheat bread. I also had a cup of coffee in my super cute Harry Potter mug that my sister made me years ago.
I put on “Harry Potter and the Goblet of Fire” to watch while I ate and cleaned. I got so much cleaning & organizing done throughout the day. Doesn’t it just feel amazing being productive?

Jordan made a delicious seafood pasta for dinner that included a seafood medley from Trader Joe’s, angel hair pasta, alfredo sauce, Tony’s seasoning, and cayenne pepper. It tasted amazing! The seafood medley was a mixture of shrimp, sea scallops, and calamari, which can be found in the frozen seafood section at Trader Joe’s.
We watched the new episode of Tiger King while eating & laughed throughout the entire episode. That show was hilarious and I honestly hope they do end up making a movie about it all! After dinner, Jordan and I went for a short walk around the apartment complex before getting ready for bed.



I started off this morning at the trails again. I woke up pretty sore from Tuesday morning’s run/walk, so I took it a little easier today. I accomplished a total of 3.75 miles with 0.60 miles of running & 3.15 miles of walking. It was another beautiful morning with 48 degree weather. I’m trying to soak up time outdoors as much as I can, especially while the weather is this nice!
I spent the rest of my morning grocery shopping/disinfecting the groceries. I’m not gonna lie, gorcery shopping caused some anxiety for me. I made sure to wear a mask & gloves + have sanitizer handy, but just making sure to be careful with what I touched, making sure I stayed a safe distance from others, and cleaning all of the groceries once I got home had my heart racing… I decided to sit down & relax afterwards, while I ate some leftovers for lunch and finished up today’s recap.
I’m excited to tackle some more cleaning and organizing throughout the day + cook a yummy home-cooked dinner this evening. My goal during this quarantine is to get fully caught up and maintain all of the cleaning and organizing that has needed to be done when I didn’t have time and to hopefully continue it all with ease once I start working again.
