Hey y’all! I hope that each of you are having a great start to your week. I spent most of yesterday trying to conquer some big tasks I had been pushing aside because I was “too busy,” but now that we’re almost all being forced to stay home, it’s a great time to get tasks done and try new things!!
Yesterday I whipped together one of my favorite lunch recipes. I wanted to share this yummy & easy recipe with y’all so you can try it too. I hope you enjoy!
Pasta Salad Ingredients
1 Bag of Tricolor Rotini Pasta
8 Chicken Breast Tenders
2-3 Tablespoons of Olive Oil
Italian Seasoning (to taste)
Old Bay Garlic & Herb Seasoning (to taste)
2-4 Handfuls of Baby Spinach
Feta Cheese (to taste)
Girard’s Olde Venice Italian Dressing (to taste)
Step 1: Slice chicken breast tenders into cubes.
Step 2: Place sliced chicken into a zip-loc bag then add 1-2 tablespoons of olive oil, 1 tablespoon of Old Bay Garlic & Herb seasoning, and 2 teaspoons of Italian seasoning.
Step 3: Let the chicken marinate while getting the pasta ready to boil & warm up the pan to cook the chicken on.
Step 4: Boil the pasta while cooking the chicken at medium heat on the stove-top. It should take roughly 10-12 minutes for both the pasta and chicken to fully cook, but you should always make sure to check that the meat is cooked fully & taste the pasta before draining it all.
Step 5: Sauté 2 big handfuls of spinach at low-medium heat with olive oil and Old Bay Garlic & Herb Seasoning. I used about 1-2 teaspoons of the oil and seasoning.
Step 6: Add the sautéed spinach, pasta, and chicken to a bowl.
Step 7: Sprinkle feta cheese & add Italian dressing to your liking, then mix it all together.
Step 8: Enjoy the meal!
I hope y’all love this easy recipe as much as I do. Like any recipe, it’s great to adjust the seasonings to your liking. This pasta salad also tastes amazing with sliced hard-boiled eggs added to it or even to replace the chicken. (P.S. make sure to sauté fresh spinach each time you eat the leftover pasta. The sautéed spinach will end up soggy if you save it for leftovers.)
