Finally Caught Up: Running, Yummy Eats, And Fun with Friends/Family!

Good afternoon and happy Monday! I’m super excited about this post because I am finally caught up on the blog. I have two new posts coming soon that I’m also very excited about, but let’s go ahead and start here today. About a week after the wedding I really tried to get myself into healthier eating and running consistently. After work on Thursday morning, I hit the trails for a 1 mile run. My running is super slow right now because I’m taking walking breaks or doing walking/running intervals, but I’m slowly getting myself to be able to run more than walking, which I’m super happy about! I met my sweet guy for a yummy lunch and BJ’s. I ordered the Lemon Thyme Chicken, which is my personal favorite there. It has grilled chicken, chopped onions, red peppers, tomatoes, Brussel sprouts, and brown rice.

Jordan ordered their California Chicken Club with a Wedge Salad and fries. It looked scrumptious! I accomplished another 1 mile run around my apartment complex on Friday afternoon. My entire weekend was crazy!!! I had 11 of my students compete at the Houston Invitational and it was a total success. My students worked so hard for this competition and skated their hearts out. I couldn’t have been any more proud of them. Monday (March 11th) marked the first day of beginning my running plan. I did 1 mile of running/walking intervals keeping myself running for 2 minutes & walking for 1 minute and it went great! After my run I whipped up some garlic pesto salmon, couscous, and veggies. It was a delicious meal! On Tuesday, I hit the trails at a park nearby my apartment for a 30 min power walk. I also did a little bit of circuit training once I got home. I used our instant pot for the first time that evening and made some delicious beef stew. I’ll have to share this recipe with you guys in the fall/winter because it’s a great way to warm up on a cold day. I did 1.50 miles of walking/running intervals after work on Wednesday and it felt great! On Thursday we spent our last night at the Rodeo for the season. Jordan and I went with a bunch of our neighbors to see Chris Stapleton and we had the greatest time! Chris Stapleton sounds incredible live, so if you’re ever contemplating on whether or not you should see him, I highly recommend that you go. It was very rough to get myself to run on Friday after a full night of drinking at the rodeo the night before, but somehow I got myself out there and accomplished 2 miles of walking/running intervals. I was very proud of myself! Friday night, Jordan and I went out for some Italian food at the Adriatic Cafe and to the movies with a couple of our friends to see “Captain Marvel.”

We split their bruschetta appetizer & chicken Parmesan, which was delicious. We also thought that “Captain Marvel” was great and cannot wait to see the new Avengers movie next month! Saturday, Jordan and I went to Chicken Salad Chick for a nice lunch. I ordered their original chicken salad sandwich along with their potato soup, which is super yummy!

After lunch, we headed downtown to look at wedding bands and get my engagement ring cleaned. Later that evening we checked out Fire Ant Brewery in Downtown Tomball with Jordan’s family. We shared a flight of beer and both really enjoyed their blonde ones. I also ordered a burger and tried some of their Mac-n-cheese. My burger was great, but I’m definitely ordering the Mac-n-cheese next time! Sunday was St. Patrick’s Day and boy did we have a fun-filled day! We spent the first half at the annual St. Patrick’s Day parade off of 1960 and the second half with lots of family and friends at Mo’s Irish Pub & District 249. I have always and will always love celebrating this very green and very fun holiday! 🍀 Monday rolled around and I accomplished another 1 mile of run/walk intervals, but this time I had my favorite workout partner with me! I made us some chili for dinner & we began watching “Vice.” I spent the daytime on Tuesday searching for dresses to wear for our engagement pictures that were taking place the following weekend. Once I finished working, Jordan and I went to our apartment gym to workout. I did 2 miles on the elliptical & some ab workouts for my cross-training that day. Wednesday was most beautiful first day of Spring. I went for my 1.50 miles of run/walk intervals followed by some stretching and a 2 mile walk. The scenery was gorgeous and the weather was amazing, so I was a very happy girl! Jordan and I headed back to the mall together on Wednesday evening so he could help me find the perfect dress. He picked out about 10 different dresses for me to try on and I ended up falling in love with these two! I’m thinking that he needs to come clothes shopping with me way more often. 😉 Thursday was such a busy day!! I worked most of the morning, dropped my dress for the engagement pictures off to be altered, had a hair appointment, and met Jordan at the mall later to help him find something to wear for the pictures as well! Once all that was finished, I met Jordan, Mila, and the rest of his family at Texas Roadhouse for dinner. I ordered their grilled salmon with rice & steamed veggies on the side.

This is where I’ll be leaving you guys today because my next post will be all about our weekend getaway to Schulenburg, TX to take our engagement photos. I cannot wait to share that post with you next and I truly hope that you enjoyed this one!
