Hey y’all and happy Monday! I’m sad to say that I’ve gotten a little behind in my recaps lately, but there are so many fun things that I am able to share with you all! I’m going to break up my recaps into two parts, so they’re not too terribly long.
Last time I wrote was July 30th, so let’s take it from there. 😊 The Monday that I wrapped up my last post, I accomplished some cleaning and organizing. I also made some of my favorite Southwest Ancho Tilapia and seasoned zucchini for dinner.
After dinner, I went over to the gym for a 1 mile walk/run. I had planned to start my 8-Week Summer Fitness Challenge over on this day, but I ended up just getting in some small, good workouts a few times each week. Fingers crossed that I start the challenge over today and stick with it for the next 8 weeks because I have Fall fitness challenge that I’m excited to get started on once I complete it.
Tuesday morning, I headed to Kickerillo Park after working. I did a 2 mile walk around the trail and enjoyed every bit of it. The weather felt a lot cooler than it has been (still no less than 75 degrees though..) and the scenery was beautiful.
Once I got home, I mixed the leftover chorizo from Jordan’s birthday in with scrambled eggs & cheese for breakfast.
It started pouring outside later that day, so I baked some seasoned drumsticks and bacon-wrapped asparagus for lunch then sat down for a movie day with Mila. I totally got her into the “Mamma Mia” soundtrack and movie this summer. Apparently she watches the movie to sleep every night now. 😊
I didn’t get pictures, but Tuesday evening Jordan and I went over to his friend, Jarrod’s, apartment to hang out by the pool, eat dinner, and play cards against humanity with him and his girlfriend. We had tons of fun on a Tuesday night! After an early morning of coaching (and a cat nap), I ran a quick mile before having to get ready to go back to work again.
I was so happy to come home from work to Jordan’s delicious stuffed bell peppers.
Thursday was a non-stop day of coaching and once I was finally done Thursday evening, I went to a place called, Grab-n-Go Tacos, for dinner with my family. I split the Yucatán fajitas with my siblings, which were chicken fajitas that had sautéed bell peppers, onions, and mushrooms, plus their special Yucatán sauce. It was delicious.
Friday was a super fun and busy day!! I started my day at a water park called, Splash Town. My grandparents got all of their children and grandchildren tickets plus an awesome cabana to hang out in. I spent the first half of my day soaking up some sunshine, floating the lazy river, and going on some super fun water slides with my family. It was such a blast and I hope we get to do all together again next summer!
After a fun time in the sun, I rushed home to get ready for Randy and Jeanene’s wedding. Jeanene is one of Jordan’s gorgeous aunt’s and I was full of joy being able to witness her marrying the love of her life, Randy.
We had such a great night filled with yummy food, fun people, and tons of dancing. Oh and I also caught the bouquet. 😘
