An Eventful Week!

Hey y’all! It’s Friday again, so are y’all ready for a recap? I sure am! This week has been something else and it feels so good to relax and share everything with you guys.

So let’s start off where I left you guys last week: After wrapping up my recap post last Friday, I headed out to the vintage with Jordan’s family for dinner at El Tiempo (one of our faves). I ordered their chicken quesadillas and a house margarita w/no salt. 😉 Saturday morning I had a little coaching to do, so I fueled myself with a chocolate peanut butter Luna bar and some coffee beforehand.

I don’t know if I’ve ever shared my love for Luna bars with you all. I used to survive off of these things when I was training hard in skating and I love to grab one with coffee for breakfast when I’m not super hungry or don’t have time to make myself breakfast. My favorite flavors are the peppermint stick and the one in the pic above ⬆️. After work, I achieved a little over 3 miles of running (+ a tiny bit of walking) and a mixture of abs & arms circuits. That workout felt amazing and I was so proud of myself for accomplishing 3 miles. After getting myself cleaned up, I relaxed with some of my favorite Ménage à Trois while Jordan grilled us up some dinner. We ate some yummy steaks, jalapeño poppers, and au gratin potatoes for dinner.

After eating we went over to Jordan’s parents house to watch “Game Night,” which was pretty funny. I felt like parts of the storyline could’ve been done better, but I always like a movie that Rachel McAdams & Jason Bateman are in. Sunday morning, I made Jordan & I some scrambled eggs and toast before we headed to our friends birthday party.

My good friend, Ashton, threw her fiancé a surprise fiesta and it was such a fun event to be apart of. It was great getting to see Tyler be surprised and the fajitas & margaritas tasted amazing. Monday morning I made some of my favorite GF Pumpkin Cinnamon Pancakes for breakfast. I was happily surprised that Mila loved them too and she ended up having a delicious, hearty breakfast. I will be posting the recipe for these bad boys very soon! I’m hoping to bake and taste test a bunch of yummy & healthy pumpkin recipes to share with y’all this Fall! Monday evening included a pretty grueling workout. I was supposed to run 2 miles, but I ended up only running 1.20 miles and doing a little bit of leg exercises. My body was shot on Monday and I don’t know why, but I needed to be done after 1.20 miles, so I listened to my body and went home to relax.

In the evening, Jordan made his amazing Stuffed Bell Peppers (recipe is here) while I meal prepped some spaghetti to have for lunch the next day. We ate dinner while watching “Logan Lucky,” which was an awesome movie. The beginning is super slow, like so slow that we almost turned it off, but I’m so glad we didn’t because it ended up being great. I wasn’t feeling well on Tuesday morning, so I stayed home for the day. My IBS issues have been flaring up a bit lately and it’s been super annoying. I made myself some peanut butter toast & coffee for breakfast. Mila and I relaxed by watching a bunch of movies and I did some cleaning. We also ate our yummy spaghetti for lunch. I think Mila’s face enjoyed the meal more than her tummy did. 😂 When Jordan got home from work, we went down to the pool to have dinner and swim. We made some pork chops, grilled asparagus, and mac & cheese. I did some laps of swimming as my cross training for the day. The swimming made my arm muscles burn and it also felt really soothing. Wednesday morning, I coached for a few hours and made myself an egg sandwich during my break. I met up with my family at Mo’s Irish Pub to watch England play in the World Cup. While we were all very disappointed with the outcome (like to the point that tears almost made an appearance), we still had a super fun time together. I love getting to spend time with my family. ❤️

Wednesday evening was not the best. I met my grandparents for dinner at a Tex-Mex restaurant, which was super fun, but then I got a call from Jordan saying that our A/C wasn’t working (one of the worst things that can happen in Houston during the month of July). We had maintenance come over to try and fix it, but it didn’t do the trick, so Jordan, Mila, and I had to pack up and head to my grandparents at midnight to sleep somewhere cooler than 80 degrees. Thursday was another crazy day… After spending most of my day not feeling well/dealing with the A/C getting fixed, my grandfather got into a really bad accident in the afternoon. He’s okay, but the van certainly isn’t. Someone ran a red light, crashed right into my grandfather, and pushed him into another truck. God was definitely by his side that day leaving him with only a black eye and I couldn’t be more grateful. Mila & I had another girl’s day today and looked around at some stores. We had tons of fun in Hobby Lobby looking at all of the Fall decorations. I love Fall. 🍂We met Jordan for lunch at Super Yummy for some Mongolian Stir Fry. We both ordered such a montage of things in our bowls that I lost track of what each of us got. As you guys can see, my week was not the easiest, so I wasn’t able to accomplish what I wanted to workout wise. I’m determined to get started hardcore again on Monday!

I’m so excited for the fun things that Jordan and I have planned for this weekend and I cannot wait to share it all with you next week. I hope that y’all have a very nice weekend & I’ll be back to write next week. 😊
