A New Chapter & My Handsome Valentine

Hello everyone, so I have decided not to fill you in on every single detail that has happened since my vacation to Breckenridge because I am sadly so behind on blogging, but I do have some news to share with y’all that I am very, very excited about and am ready to be posting more consistently from here on out.

First of all, I hope that everyone enjoyed their Valentine’s Day. I have always loved Valentine’s Day because I enjoy celebrating how beautiful love really is and it’s an excuse for me to be as cheesy as I want for a full 24 hours. ❤️ Alright now I’m ready to share the exciting news! Since I’ve been back home from Colorado I have been so busy working and…PACKING!! As of February 7th, Jordan and I officially live together. Jordan and I have both been sick with the flu, so the whole moving process has been especially exhausting, but on Wednesday evening when I caught the last glimpse of my empty apartment I had such a sense of joy/excitement for this new chapter in our lives. I looked back one last time to see the first place I had ever called my own and even though it’s always bittersweet to leave, it felt so sweet to finally to have all of my things with me and to walk into “our place” together.

I’ve been spending this last week trying to get unpacked and resting because I’m still not better. I’ve been to the doctor’s office 3 times and was finally doing a little better this past Monday, but after being on the ice all of Tuesday morning I started to cough and get really congested again… I’m hoping this will pass very soon!! Yesterday was Valentine’s Day and I came home to some of the most beautiful roses from my sweet man.

I was so excited all day to surprise Jordan with Garth Brooks rodeo tickets. He has been dying to go see him live and we really didn’t think we’d be able to see him at the rodeo, but I was able to make it happen and couldn’t wait to tell him. 😍 We had dinner reservations at 8pm, so I prepared a little appetizer for us while we got ready. Cheese (especially goat Brie), grapes, and wine are one of my favorite combinations. We went to a place called, Fielding’s Local, for dinner and they were offering a special Valentine’s Day 4-course meal. Before any of the courses were served, Jordan and I ordered a Portuguese Reserva that was made in 2008. It tasted like something that was sent straight from the vineyard. We both loved it. First, they brought us a Smoked Salmon Dip, which are these bite sized appetizers that included a cracker topped with smoked salmon and caviar. Second, we got to pick what appetizer we each wanted to eat out of the choices given on the menu. I ordered the White Truffle Mushroom Toast and Jordan ordered the Crab Ragout. They were both delicious. The 3rd course was our entree. We chose to split their incredible Beef Chateaubriand Wellington. I can’t even explain how delicious the entree was. The roast beef had such an amazing taste and texture along with the puff pastry surrounding it and the vegetables on the side. Our 4th course was, “A Chocolate Ending.” It included melted chocolate, strawberries, marshmallows, truffles, a vanilla sorbet, caramel tart cookies, and balls of dark chocolate. It was such a delicious dessert that paired so well with the Reserva we were drinking.

We ended the night by coming back to “our home” (it makes me smile from ear to ear writing that), and watching the last 40 minutes of “Harry Potter and the Deathly Hallow part 1.” I forgot to mention that we’ve been rewatching all of the Harry Potter movies together for the first time and it has been such an exciting thing for me. We even watched a few of the movies with Mila and she loved them too. I love explaining the details from the Harry Potter book that weren’t included in the movie to Jordan even though he probably just thinks I’m a big nerd and doesn’t care to hear every detail, he still acts like he cares and listens to them which makes me so happy.

Okay, I’ll stop talking about Harry Potter now.. I hope that you all have the most joyous week, keep your roses watered, eat all your chocolates, and drink all your leftover wine (if there is any). I’ll be back again very soon!
