Fall is Finally Here!

As most of you should know by now, Fall is my favorite season. I love everything about it, the smell, the colors, the activities, pumpkin spice anything and everything, watching the leaves change. I love to sit outside, reading a good book, with a cup of coffee on a day with some good Fall weather. I wish that one day I could live somewhere or at least visit somewhere with a beautiful Fall season. Texas gets most of the exciting things I described, but we lack in the cooler weather. I’m praying we get some good cold fronts this year.

Enough about my pure love for Fall, here is what I’ve been up to the last few weeks: The Wednesday following the events on my last post, I met my family for lunch at Olive Garden. I ordered their Chicken Picatta, which came with Parmesan crusted zucchini. I loved it!! Wednesday evening, I cooked some shrimp alfredo, with garlic & lemon asparagus, and garlic knots. I loved this meal and I love how the shrimp I’ve cooked has turned out using a cast iron grill skillet. I’ve been cooking the shrimp in light olive oil, garlic powder, lemon juice, and basil. Thursday evening, I met my family at Grab & Go Tacos after I finished coaching. My brother, Davis’ girlfriend was in town from Ohio, so we all had dinner together. I ordered their chicken lettuce wraps. They were very good! I spent most of Friday decorating my apartment for Fall and caught my cat, Luna, terrified of my giant, pink “22” balloons. She wouldn’t get down for there until both balloons were gone. Saturday, I went with Jordan and his family to check out where he will be living next. His new apartments are amazing and I am so excited for him! We stopped by a restaurant after looking, which was great. I ordered their Spring Chicken Sandwich with a side of asparagus. Sunday morning, we all headed out to Lake Somerville with the boat. Mila wanted to take a picture with Buc-cee on our way there. We didn’t have any luck getting the boat in the water due to the high water from Harvey, but we all hung out in the water and ate some yummy sandwiches for lunch. Monday morning, I made one of my favorite breakfast meals. I had an egg bagel with bacon and a cup of coffee. Monday evening, I made some tacos for Jordan and I to eat as we watched “The Dark Knight.” I forgot how good that movie was. I love Christian Bale as Batman and Heath Ledger will forever be the best Joker in my eyes. I had a coaching meeting on Tuesday evening, and I met Jordan for sushi afterwards. We have loved getting to go to Yumai Sushi located inside of our local H-E-B. I order their Shaggy Dog and love the way they make it. They put spicy crab meat iniside with the tempura shrimp and it’s delicious. When I got finished coaching Thursday morning, I got a happily, surprising call from Jordan asking if I’d want to meet him for lunch down in the Galleria. He has been telling me all about how good the Berryhill is over there, so I was very excited to see him and give it a try. He ordered this amazing looking seafood burrito and I ordered a ground beef soft taco and a shrimp taco. I loved it! I went to my family’s house on Thursday for a birthday dinner. My grandmother had come in town to spend the next week in Houston and my family wanted to do a little birthday celebration with me. My mom made one of my favorite meals (Shepherd’s pie), my sister baked me a strawberry cake, and they made me some cool stuff to put in my apartment, plus that awesome Harry Potter sweatshirt. Hudson was so cute and wanted to put on his matching shirt once I opened mine. I’m obsessed with my front door!! My mom made me this adorable wreath and I found the cute doormat at Target 🙂 The following Tuesday, I met Jordan at Firehouse Subs for some dinner after work. I ordered an Italian on wheat with no Dijon mustard.

Jordan also got his truck back that day after being in the shop for almost a month. He was so excited and so was I. Wednesday, I had my siblings and grandmother over at my place for some chili dogs and pool time!! I was so excited that my grandmother got to see my new place and we all had lots of fun hanging by the pool. The following Sunday, Jordan and I went to Craft Grill for some queso, burgers, and football. Since it was now Fall, Jordan and I decided to try and make some homemade chili for the first time. We used some delicious deer meat and it turned out amazing. Cannot wait to make some more of this to eat!

I’m still a couple of weeks behind, but my next post is filled with fun events that I can’t wait to share with you all. Have a happy Monday and enjoy this cooler weather!!

XOXO, Paige.
