Fresh Start!

Hey y’all!! I hope that each of you have been doing well and I apologize yet again for being away for such a long time. Not writing has honestly made me feel sad, but I’ve been so busy and I want to be able to have time to give y’all good posts to read, so I decided to wait until I had the time to start doing that again. I also decided to not even try to catch up on the last two months, but just to start fresh from this past week. It feels incredible to be doing this again. 

Last Monday was the start of my Summer schedule. I could not wait for this schedule change because I’m able to get all of my coaching done in the mornings and have the rest of the day to do absolutely anything that I want!I spent most of Monday running errands and cleaning. My brother and I met Jordan at the gym in the evening for our first day of working out together in weeks. It felt so good to be back and fun to be doing it together again. We worked on our chest and biceps for the first day. We came back to my house excited to eat my Mom’s delicious tilapia and black bean/brown rice recipe for dinner. I made myself a sandwich for lunch on Tuesday and I used “Dave’s Killer Bread” for the first time. I’ve tried the bagels in this brand, which were delicious, but I absolutely loved the bread. The cool thing about this brand is that it has more protein in it than regular bread and it also has no enriched flour. 

This sandwich contained: ham, provolone cheese, light mayo, and mustard. 

I met Jordan at the gym Tuesday night to workout our legs and do some running. We only got through squats and leg press before we felt like we needed to move onto stretching and cardio, but it was a great start. My legs were sore for a good 3 days after that lol. After the gym, Jordan and I came back to his place to make this delicious dinner. He grilled an amazing steak while I made some asparagus and seasoned red potatoes. I met my sister and one of our good friends, for lunch on Wednesday. I’ve been craving sushi like crazy, so I’ve been choosing sushi for so many lunches lately. I’ve gotten really into eating the raw salmon sushi and I love getting a snow crab roll with spicy mayo. Wednesday night, Jordan and I made some homemade pizza. I got some premade whole wheat crust, mozzarella cheese, pepperoni, and a roasted garlic tomato sauce. It was so yummy! I had a long break between my coaching sessions on Thursday, so I stopped by La Madeleine for breakfast. I always order their American Breakfast with egg whites, bacon, and wheat toast. It was very relaxing sitting having breakfast alone while I listened to Ed Sheeran’s new album through my headphones. I spent the rest of my Thursday being productive. I packed for my upcoming weekend trip, washed my car (with Hudson ☺️), cleaned, and got some sun. I also stopped and made myself another one of these sandwiches for lunch since I loved it so much. 

Thursday evening, Jordan and Mila came over to have dinner with my family and I. My Mom made a delicious garlic & herb steak with boiled red potatoes and chipotle lime corn on the Cobb. It was sooo good! Bright and early Friday morning, Jordan and I headed to Austin. I had to go for the weekend to coach a figure skating competition, but I was so excited he could join me so we could have a little adventure during my free time. In between practice and my skater’s competition event, Jordan and I grabbed an appetizer at the hotel. We got an order of crabcakes to keep us full until my next break. After my skater’s first event, we stopped by a burger place across the street from the rink called, Hopdoddy. We just had this restaurant open near our homes in Houston, so we already knew it was going to be amazing. I ordered their special burger “The Juicy Lucy” and added a sunny side up egg on top.Jordan ordered a burger called “Goodnight Good Cause.” Some of the proceeds from this burger go towards a good cause, which is pretty cool. He also added an egg to his, but doesn’t advise it for this burger because the flavors really don’t go well together. Although, he did have the same burger in Houston without the egg and said it was really good!Our bartender was super cool and gave us free fries so we could try out his special sauces. Our favorite was “The Ring of Fire.” Once my students finished competing for the evening, Jordan and I met with my friend, Taylor, at a sports bar called “Cover 3” to watch the basketball game. It was so fun visiting with Taylor and watching the Cavs finally win a game. Jordan ordered himself a Moscow Mule to try for the first time and I got a Cosmo. Saturday morning, my girls skated very well again and I felt so proud. The joy of coaching and watching my student’s dreams come true is such a wonderful feeling. Jordan and I visited Barton Springs for the first time with a couple of his good friends who live nearby. It was such a cool place. It’s a giant pool that measures at about 3 acres in size, is fed from underground springs, and it stays between 68-70 degrees always. It felt like we were swimming in an actual river, plus the whole environment was really fun. We had such a great time relaxing and soaking up the sunshine, followed by some Tex Mex in downtown Austin. Saturday night, we decided to hit up the Top Golf in Austin to show off our mad skills. You guys should have seen how good I was at missing the ball entirely. Jordan got quite a show. We ordered their Buffalo sliders for dinner, which are my favorite!! I coached one more event Sunday morning before Jordan and I headed back to Houston. Another great skate to end my wonderful weekend. Once I made it back to Houston, I went with my family to a cousin’s birthday party. We all hung out by the pool and enjoyed some more sunshine.
