It’s Already Monday?

I hope y’all had a wonderful weekend!! I thoroughly enjoyed my days off of school, even though Monday came in hot & heavy. 

  
 Thursday, I enjoyed a crepe (AGAIN) at my go to lunch place. It was gorgeous outside, so I sat in the sunlight, next to a beautiful waterfall while I ate.

 
My mother, sister, and I went to go see “The Choice” at the movie theater on Friday. I don’t know if y’all remember me mentioning that I read the book last Fall, it was written by Nicholas Sparks. I adored the book, and the movie was fantastic! I will warn those who have read the book that they did make some changes in the movie, but they were changes that made the movie great. I was brought to tears and fell in love with the story all over again. Nicholas Sparks books and movies help me hold on to what I want to find in a husband one day. I know the stories are fictional, but love is not. 

 After the movie, we stopped by the grocery store to get stuff for homemade pizzas and some red wine (my personal favorite).

    For the pizza, I used whole wheat crust, spread light virgin olive oil as the sauce, and sprinkled some garlic powder before adding the mozzarella cheese, and the reduced-fat turkey pepperoni’s. I also got a bottle of Spanish wine that I enjoyed over the weekend. Always look for wine from Rioja! 😉

 Saturday, I watched Hudson’s first baseball game. It was adorable watching the little 4 and 5 year old boys running around the field and trying to figure out how the game worked. At the game I also found out that my aunt & uncle are expecting their second child!! So exciting.

Later that evening, my family and I went to a belated Valentine’s Day party that my grandparents threw. It was lots of fun! Everyone brought their own meat to cook on the grill and we all hung out in the hot tub. The highlight of the night was singing bohemian rhapsody with my grandfather on the karaoke machine. We totally rocked it!

 Sunday morning I woke up not feeling my best. The whole family has been sick with colds and it started to hit me as well. When I woke up I was craving the pumpkin muffins I baked during the week, but it had been 5 days since I baked them so they were already starting to go bad.. I’m the type of person that if I’m in the mood for something I better satisfy it or else I won’t want to eat anything. As I was looking through my pantry I found some unhealthy/delicious pumpkin pie poptarts that I bought a few months ago. They don’t expire until June, so I was lucky enough to find something pumpkin to eat lol.
  Today, I had an exam for Texas government. I spent lunchtime studying at Coco Crepes. I know. I’m obsessed with this place. And yes, I always order the exact same crepe. 

I made it through my Monday classes, feel pretty good about the exam I took this evening, and enjoyed watching the Bachelor and a recorded episode of Vampire Diaries with my fam. I am now going to try and catch some Zzz’s so that I’m not a complete zombie during my 8am class tomorrow.
